Quinoasalade met edamame en courgette

- 1 zucchini - sliced in spaghetti with a spiralizer or mandoline
- 1 cup uncooked quinoa
- 1 cup edamame beans
- 2 tbsp (gf)soy sauce
- 1 tbs sesame oil
- lime juice
- pepper for seasoning
- fresh herbs such as cilantro or spring onions are optional
- Cook the quinoa with a cube of vegetable stock.
- Cook the edamame beans al dente.
- Sear the zucchini in a large skillet with the sesame oil for about 4 minutes or until tender. Add the edamame beans and season with pepper.
- Add the vegetables to the quinoa and finish with a dressing of soy sauce and lime juice.
- Top with the spring onions and cilantro.
- Enjoy!
