A lovely treat for Valentine's Day

  • 250 gr (gf) self raising flour
  • 200 gr of mascobado sugar
  • 4 eggs
  • 200 gr coconut oil (melted or room temperature)
  • 200 gr yogurt (I used Alpro mild & creamy)
  • 2 tbsp raw cacao nibs
  • 2 tbsp of Linwoods lineseeds and berry mix
  • 2 tbsp of pecans - crushed into little pieces
  1. Preheat your oven to 180°C.
  2. Start by whisking the egg whites until completely stiff.
  3. Then mix the egg yolks with the sugar until this mass doubles.
  4. Add the flour, coconut oil, linwood mix, yogurt, nuts and cacao and mix until well combined.
  5. Carefully fold in the egg whites.
  6. Grease a cake tin or put some paper cups in a muffin tray.
  7. Add 1 large tbsp of mixture per paper cup or pour the batter in one big cake tin.
  8. Bake the paper cups for 15 minutes and the large cake tin for 40 minutes.
  9. Let it cool down and enjoy!
  10. Serve with some whipped cream or extra yogurt if you want a healthier touch.
