Stoemp is perfect dish to be paired with some tangy mustard or pickles for extra spice and taste. I love the Mustard & pickles by Camp's.

Ingredienten
  • 180 gr fresh spinach
  • 180 gr fresh shredded green cabbage or kale
  • 120 r frozen peas
  • 1 onion sliced
  • 1 zucchini, cubed
  • Olive oil
  • 200 ml chicken stock
  • 6 tbsp spinach soup
  • a pinch of nutmeg
  • pepper and salt for seasoning
Werkwijze
  1. Start by steaming or cooking your potatoes.
  2. I prefer steaming because when you cook your potatoes you'll lose some taste.
  3. Heat a dash of olive oil and add the onion. Let this simmer for 2 minutes then add the zucchini and simmer for 8 minutes. Add the spinach, kale and peas and let this veggie mixture simmer for 3 more minutes while constantly stirring. Add half of the stock and nutmeg and let this mixture simmer for 5 more minutes.
  4. When your potatoes are cooked, mash them in a big bowl. Add the rest of the chicken stock and season with pepper and salt.
  5. Gently fold the potatoes into the veggie mix and let it simmer over a low heat for 5 more minutes. Season with pepper and salt.
  6. Serve with bacon, salmon, chorizo or sausages...whatever you like.
  7. Enjoy!
