Ingredienten
180 gr fresh spinach
180 gr fresh shredded green cabbage or kale
120 r frozen peas
1 onion sliced
1 zucchini, cubed
Olive oil
200 ml chicken stock
6 tbsp spinach soup
a pinch of nutmeg
pepper and salt for seasoning
Werkwijze
Start by steaming or cooking your potatoes.
I prefer steaming because when you cook your potatoes you'll lose some taste.
Heat a dash of olive oil and add the onion. Let this simmer for 2 minutes then add the zucchini and simmer for 8 minutes. Add the spinach, kale and peas and let this veggie mixture simmer for 3 more minutes while constantly stirring. Add half of the stock and nutmeg and let this mixture simmer for 5 more minutes.
When your potatoes are cooked, mash them in a big bowl. Add the rest of the chicken stock and season with pepper and salt.
Gently fold the potatoes into the veggie mix and let it simmer over a low heat for 5 more minutes. Season with pepper and salt.
Serve with bacon, salmon, chorizo or sausages...whatever you like.
