A great way to start your day is with a healthy breakfast. There are days that you are not in the mood for a smoothie or green juice or granola or oatmeal…a chia pudding might be a nice alternative.
I make these chia puddings the night before to get a healthy kick start of my day.
You can make this pudding with different kinds of pureed fruit or fruit juice. I usually prefer a layer of pineapple puree mixed with chia seeds (4 tbsp puree for 1 tbsp chia), topped of with kiwi or raspberry puree mixed with chia seeds (4tbsp puree for 1 tbps chia seeds and 1 tsp lime juice). When you make your pudding you have to make sure to let the first layer rest in the fridge for at least 30 minutes before gently adding the next layer. As you can see in my picture I wasn’t really patient….
Sometimes I start with a layer of coconut milk pudding (5 tbsp for 2 tbsp chia) at the bottom to give the whole some extra taste.
Finish of with some fresh fruits and seed and have a great breakfast.
I make these in jam jars so I can take it with me as a quick breakfast to go or healthy snack at work.
